Baked Stuffed Shrimp

These shrimp are so good. You will be salivating just reading this recipe


1 lb large shrimp, peeled and devained with tail on (I highly recommend letting the butcher do this, peeling and cleaning shrimp sucks
1 tsp olive oil
salt and pepper
1/2 c shrimp - chopped
1/2 c scallops - choopped
1/2 c panko bread crumbs
1 tsp fresh rosemary - chopped
1 tsp fresh thyme - chopped
1 tsp fresh basil - choopped
salt and pepper


preheat oven to 350

Butterfly shrimp keeping tail on. Drizzle with olive oil, salt and pepper. Place on non stick baking tray

Combine scallops, schrimp, panko and herbs and salt and pepper to taste. Divide evently among butterflied shrimp to just overflowing. Drizzle with olive oil. Bake stuffing side up for 8 minutes or until just golden.

Serve with salsa and/or guacamole.
